Cool down during this heatwave with my Minty Mojito Popsicles!
It has been insanely hot this summer and I’ve been looking for ways to beat the heat!
I’ve been noticing creative popsicle recipes trending all over social media lately. I don’t know about you guys, but I am totally living for it! I wanted to create a popsicle recipe that was flavourful, refreshing and super easy to make.
The first thing that popped into my mind was the delicious mojito recipe that my sister and I make at the lake every summer. It is so delicious and low on sugar, which I love! That recipe inspired the creation of my Minty Mojito Popsicles. I hope you enjoy!!

Ingredients:
- 3 oz White Rum
- 1 oz Triple Sec
- 2 Limes, juiced
- 12 Mint Leaves
- 5 Ice Cubes
- 2 tbsp Granulated Sugar
- 1 cup Unsweetened Lemon Lime Soda
Method:
In a blender, add the white rum, triple sec, fresh lime juice, mint leaves, ice cubes and granulated sugar. Blend until all of the ingredients are combined.
Add the unsweetened lemon lime soda into the blended mixture and stir with a spoon to combine.
Pour the mojito mixture into the popsicle molds (this recipe makes 6 popsicles) and place in the freezer. Allow the popsicles to freeze overnight.
