I love to indulge in this recipe for breakfast, but it is honestly great any time of day! Better yet, it is the perfect make ahead recipe for brunch get togethers or tasty appetizer platters!

Ingredients:
- 1 loaf of fresh Sourdough Bread
- 1 500g container of whole milk Ricotta
- 3-4 Peaches
- 8-10 Blackberries
- Honey
- Olive Oil
Method
Whip the ricotta in a food processor (a blender works also) until smooth. Set aside. Note that any extra you may have left over can be stored in the fridge for 2-3 days.
Cut the peaches in half and remove the pit. Lightly drizzle each half with olive oil. Place the oiled peaches face down onto a grill pan over medium heat. Grill the peaches for approximately 5 minutes, or until the peaches are warmed through with visible grill marks. Remove from heat and cut the peaches into slices. Set aside.
Slice the sourdough bread and drizzle each slice with olive oil on each side. Place the bread in the warm grill pan and cook the bread until golden brown and toasty. This takes approximately 3 minutes per side over medium heat. Set aside.
Now its time to build your toast! Slather the velvety whipped ricotta onto each slice of bread, follow with slices of the grilled peaches, fresh blackberries and a drizzle of honey.
