This Creamy Butternut Squash Pasta with Roasted Garlic is one of my favourite fall dishes because it not only tastes incredible, but it is super comforting and easy to make at home. It may seem complicated, but let me tell you it surely is not!
This easy and delicious recipe brings together the classic fall flavours of roasted veggies and garlic… you just can’t go wrong! You get the subtle sweetness of the butternut squash, the warm aromatics from the garlic and a lovely hint of spice from the chilli flakes.
I seriously can’t get enough of this recipe, you have got to try it!!
My Tips for the Perfect Creamy Butternut Squash Pasta
Make sure to always reserve some of the pasta water! You will achieve the creamiest pasta sauce that perfectly coats the pasta noodles by adding some reserved pasta water to your sauce. Trust me, it works!
I recommend using a high speed blender when it comes to making homemade pasta sauces and soups. You will get a better consistency in less time.
Roasting the garlic makes all the difference! It becomes so smooth and creamy and the flavour really explodes! It becomes almost sweet when roasted… so good!
Ingredients:
1 butternut squash, cubed (about 5 cups)
1 large garlic bulb (or 2 small)
Olive oil
Salt
1/3 cup chicken stock
1/2 cup milk
3 cups uncooked pasta of your choice
1/2 cup reserved pasta water
1/2 tsp chili flakes
Fresh parsley for garnish
Freshly grated parmesan cheese for garnish
Method
Pre heat the oven to 375 degrees.
On a baking sheet, add the cubed butternut squash and drizzle with olive oil and season with salt.
Slice the top of the garlic bulb off to expose each clove within the bulb. Place the garlic onto some tin foil and drizzle the garlic bulb(s) with olive oil and season with salt. Wrap the garlic in the foil so it it sealed, almost like a little purse. Place onto the baking sheet with the butternut squash.
Place the baking sheet into the oven and cook for 40-50 minutes, or until the squash and garlic is fragrant and cooked through.
While the butternut squash and garlic are roasting, cook the pasta in salted, boiling water.
Add the roasted butternut squash into a blender along with the chicken stock and milk. Squeeze the roasted garlic cloves out of the bulb and into the blender as well. Blend until all of the ingredients and smooth and creamy.
Pour the butternut squash sauce into a non stick pot and heat over medium heat to keep warm. Add the chilli flakes and additional salt if needed. Mix in the cooked pasta and half of the reserved pasta water. Add the rest of the pasta water if needed until you have a creamy, smooth sauce that fully coats the pasta.
Garnish with fresh parsley and grated parmesan cheese! Enjoy!!
