Who doesn’t love a good homemade soup!?
There is just something so comforting about a homemade soup on cold day. I don’t know about you guys, but where I live it has just started cooling off. One of my go-to recipes when the winter season approaches is this Roasted Tomato Soup.
Fresh tomatoes, onions and garlic are slow roasted until perfectly caramelized and blended to create a ton of hearty, delicious flavour! I love to add chili flakes when I make this recipe to give the soup a nice kick of spice, although this is totally optional 🙂
A toasty slice of bread or a melty grilled cheese is the most perfect pairing with this Roasted Tomato Soup that will transport you straight to heaven!
Ingredients:
10 medium tomatoes
1 small onion
1 large bulb of garlic cloves
Good quality olive oil
2 cups chicken stock
1/2 cup milk
Chili flakes (optional- spicy: 1 tsp / a kick of spice: 1/2 tsp / no spice: omit chilli flakes)
Fresh Basil
Salt to taste
Method
Preheat the oven to 425 degrees.
Slice the tomatoes in half and place onto a baking sheet. Quarter the onion and place onto the baking sheet with the tomatoes.
Slice the top of the garlic bulb off to reveal all of the cloves inside and place onto a piece of foil. Drizzle with olive oil and season with salt. Wrap the foil around the garlic so it is sealed and place it onto the baking sheet with the tomatoes and onion. Bake for 35 minutes or until everything is fully cooked and fragrant.
Add the roasted tomatoes and onion into a high speed blender. Squeeze the roasted garlic cloves out of the bulb and into the blender along with the chicken stock. Blend until smooth.
Pour the soup mixture into a pot and heat over medium low temperature. Pour in the milk and season with salt to taste and chill flakes if using.
Serve with fresh basil and enjoy!
