Brussels sprouts are one of those vegetables that sadly has a bad reputation. They are commonly remembered as that vegetable that no one really eats at family dinners because they were aggressively boiled. I am here to tell you that they can actually be extremely delicious and dare I say, become your new favourite vegetable!?
The secret is to roast them! Roasting any vegetable in the oven will take them to the next level. They become golden brown and crispy… almost caramelized, leaving you with an unforgettable bite.
Not only is the recipe for my Maple Bacon Brussels Sprouts roasted to perfection and coated in the perfect, sticky maple bacon sauce… it is sprinkled with the most delicious toppings. Dried cranberries, toasted almonds and freshly grated parmesan cheese… YUM.
Maple Bacon Brussels Sprouts
Ingredients:
1 bag of brussels sprouts (about 2 pounds)
1/2 pack bacon
3 tbsp pure maple syrup
2 tbsp fresh thyme, chopped
1/2 cup slivered almonds, toasted
1/2 cup dried cranberries
1/4 cup freshly grated parmesan cheese
Olive oil
Salt to taste
Method
Preheat the oven to 425 degrees.
Clean and cut the Brussels sprouts in half, or you can leave them whole if they are small. Transfer the Brussels sprouts onto a baking dish and drizzle with olive oil and season with salt. Roast for 45-50 minutes, or until cooked through and crispy.
While the Brussels sprouts are roasting, cut the bacon into small squares. In a cold dutch oven add the bacon and heat on the stove top over medium high heat. Make sure the dutch oven is cold before adding the bacon, this allows the bacon to get super crispy and delicious! If you don’t have a dutch oven, you can use a large non stick pan.
Once the bacon is crispy, remove most of the bacon grease from the pan. You can leave a little bacon grease behind for extra flavour if you like! Lower the heat to medium and add the chopped fresh thyme and pure maple syrup. Stir until the maple syrup slightly thickens to create a yummy sauce.
Toss the roasted Brussels sprouts and the maple bacon mixture together until all of the Brussels sprouts are fully coated. Sprinkle on the dried cranberries, toasted almonds and freshly grated parmesan cheese and serve hot.
Enjoy!!
I hope your bellies are happy and full after indulging in these Maple Bacon Brussels Sprouts!
