Christmas is a week away and I cannot wait to indulge in a delicious meal with some of my favourite foods… roasted turkey, mashed potatoes, homemade cranberry sauce, maple bacon Brussels sprouts and of course… the STUFFING.
In my opinion, you can’t have a holiday dinner without stuffing! Soft in the middle and perfectly browned on the top. Not to mention the combination of sage and thyme that make this recipe so classic and delicious!
Stuffing has got to be one of my favourite side dishes during a holiday meal. Something about it is so nostalgic.
How to make the best Apple Sage Stuffing at home without stuffing the turkey:
Growing up, we would always stuff the turkey to infuse the stuffing with lots of flavour. Over time I realized that making homemade stuffing from scratch can be so much EASIER and save you a ton of time.
Baking the stuffing separate from the turkey in the oven allows you to better control how it is cooked so that it turns out perfect every time. You want it to be soft and flavourful in the middle and perfectly browned and crunchy on the top. I achieve this by covering the baking dish for the first 15 minutes and then allowing the stuffing to finish cooking uncovered.
To ensure that your stuffing has a ton of flavour, I use chicken stock to soften the breadcrumbs to mimic the taste as if it was cooked inside the turkey. So tasty and delicious! Although the star ingredients have to be the SAGE and THYME. These herbs make this entire recipe! They are so classic and punch you in the face with flavour! Since these herbs can have an intense flavour, I like to add some fresh diced apples in the stuffing for a subtle sweet bite. This perfectly balances all of the flavours.

Classic Apple Sage Stuffing
Ingredients:
1/4 cup + 1 tbsp butter
1 medium onion, finely diced
4 celery sticks, finely chopped
1 apple, diced
2 tbsp ground sage
1 tbsp dried thyme
12 cups of dried breadcrumbs
2.5 cups chicken stock
Salt to taste
Method
Preheat the oven to 350 degrees.
In a dutch oven, melt 1/4 cup of butter on the stovetop over medium heat (if you do not have a dutch oven, any other cooking pan will do). Once the butter is melted, add the chopped onion and celery. Once the onion starts to turn translucent, add the diced apple, ground sage and dried thyme. Stir all of the ingredients and allow to cook for a few more minutes. Remove from heat once all of the ingredients are soft and cooked through.
Add the dried breadcrumbs to the dutch oven and stir to combine all of the ingredients. Pour in 2 cups of chicken stock and stir. Add another 1/2 cup of chicken stock if needed. You want the breadcrumbs to soften, but not get soggy. Season with salt if needed.
Place the stuffing into a baking pan that has been lined with butter or cooking spray.
Separate 1 tbsp of butter into small pieces. Scatter the small bits of butter over the top of the stuffing. Cover the stuffing with foil and bake in the oven for 15 minutes. Remove the foil and bake for an additional 30 minutes uncovered.
Serve hot and enjoy!!
