Once you try this Spicy Vodka Pasta, you are going to be hooked on this creamy vodka sauce… trust me!
Creamy Vodka Sauce has been all the rage lately and people can’t seem to get enough of it. For so long, I always thought making it from scratch at home would be so much work so I never really thought to make it. Boy was I wrong!! It is so freaking EASY to make and hella delicious!!
Velvety and creamy with the perfect kick of heat and piled high with freshly grated parmesan cheese and fresh basil… DELISH!
What makes the Spicy Vodka Sauce so damn good!?
Vodka sauce is the new tomato sauce if you ask me. I find it so much more balanced and less acidic than a traditional tomato sauce. Don’t get me wrong, I still love a good tomato sauce… but this creamy vodka sauce takes the cake for me!
The base of this sauce is compromised of onions, garlic, tomato paste, chilli flakes and Italian seasoning, all simmering away in some vodka. Personally, I usually shy away from using too much tomato paste because I find the flavour so strong, although the vodka cuts down the acidity and creates the most delicious balance of flavours.
Next you add the cream to round everything out so you are left with a velvety, smooth pasta sauce.

Spicy Vodka Pasta
Ingredients:
3 cups uncooked, short grain pasta
2 tbsp olive oil
1 small onion, finely diced
2-3 garlic cloves, minced
1/4 cup tomato paste
1 tsp chilli flakes (use 1/2 tsp if you prefer less spice)
1 tsp Italian seasoning
1/4 cup vodka
1/2 cup milk
1/2 cup cream
1 tbsp butter
1/2 cup parmesan, freshly grated plus more for topping
1 cup reserved pasta water
Salt to taste
Fresh basil for topping
Method
Cook the pasta in boiling salted water. Make sure to reserve about 1 cup of the pasta water before draining.
While the pasta is cooking, heat the olive oil in a dutch oven or non stick pan over medium heat. Add the finely diced onion and cook until it appears fragrant and translucent. Next add in the minced garlic, tomato paste, chilli flakes and Italian seasoning. Cook for about 2 minutes until the garlic becomes fragrant.
Add in the vodka, stir and cook for an additional 2 minutes. Reduce the heat to medium low and add in the milk and cream. Stir and allow to simmer for a few minutes until all of the ingredients are combined.
At this point, I like to take about 2/3 of the sauce and blend it in a blender (you can also use an immersion blender). Add the sauce back to the pot and stir until you have a smooth and creamy sauce. You can skip this step if you prefer your sauce to have more texture.
Add in the butter, freshly grated parmesan cheese and 1/2 cup of the reserved pasta water. Gently simmer over medium low heat and stir until the sauce becomes velvety smooth. You can add more pasta water little by little if needed.
Remove the sauce from the heat and stir in the cooked pasta. Season with salt to taste.
Top with freshly grated parmesan cheese and fresh basil. Serve hot and enjoy!!
