That’s why my Summer Picnic Sandwich with Roasted Red Pepper Spread is absolutely perfect for this time of year! Sharable, delicious and great for on-the-go!
And for those of you wondering, a picnic style sandwich is just that… all of your favourite toppings piled high onto a loaf of bread like ciabatta and cut into multiple perfect little sandwiches. They are great to take along on summertime activities like picnics (… duh 😉 ), hikes, golfing, to the beach or out on the water for boat days!
How To Make Roasted Red Pepper Spread
The star of the show and the BEST part about this recipe has definitely got to be the Roasted Red Pepper Spread! Packed with yummy flavours from the roasted red peppers, a nice kick of heat from the Calabrian chilis and freshness from the basil… you have got to try it!!
It comes together super quickly by adding all of the ingredients into a food processor or blender so anyone can easily make it at home!
Not only is this Roasted Red Pepper Spread the perfect accompaniment to this Summer Picnic Sandwich, but it is also a great dip for fresh or grilled veggies or delicious when spread onto pizzas or in bowls!

Summer Picnic Sandwich with Roasted Red Pepper Spread
Ingredients:
1 loaf of bread (Ciabatta, Calabrese or your favourite loaf)
For the Toppings:
127g assorted deli cold cuts
3 large slices swiss cheese
3 large slices marble cheese
Cucumber slices
Shredded romain lettuce
Hot banana peppers
Mayo
For the Roasted Red Pepper Spread:
1 jar (296 ml) mild roasted red peppers
1 tsp Calabrian chilis in oil
1 tsp sugar
6 large fresh basil leaves
1 garlic clove
Salt to taste
Method
First you want to make the Roasted Red Pepper Spread. Add the entire jar (including the liquid) of mild roasted red peppers into a food processor along with the Calabrian chilis, sugar, basil leaves and garlic. Blend until smooth and then season with salt to taste.
To build the Picnic Style Sandwich, slice the loaf of bread lengthwise down the middle. Hollow out some of the bread on the top piece to make room for the toppings. On the bottom piece of bread, spread on a generous amount of roasted red pepper spread. On the top piece of bread, spread on some mayo.
Onto the bottom piece of bread, begin to layer on the Swiss and marble cheese and assorted deli cold cuts. Top with cucumber slices, hot banana peppers, shredded romaine lettuce and the top piece of bread. Slice into picnic style sandwiches (about 4) and enjoy!
