I don’t know about you guys, but pasta has got to be one of my all time favourite meals! It can be rich and creamy, spicy, comforting or even light and fresh! The perfect versatile meal that can be thrown together with whatever you have in the fridge or pantry.
Today, I am taking the light and fresh pasta route and sharing one of my favourite bright, summery recipes with you… Sweet Pea Pesto Pasta! Quick and easy, and not to mention extremely flavourful! A great recipe to try out this week for dinner!
The secret ingredient that makes this Pesto so good is fresh peas!
Fresh green peas not only taste delicious but they are an excellent source of several vitamins, minerals and antioxidants.
I love using them when I make a homemade pesto because they create a smooth, velvety texture and contain decent amounts of fibre and protein!
This fresh Pea Pesto can be enjoyed with just about anything you like!
Not only is this Pea Pesto a match made in heaven when tossed with your favourite pasta, like the recipe I am sharing today! BUT it is also completely DELISH in many other dishes:
Try spreading it on summer sandwiches or as the base for homemade pizza!
It is also a fabulous addition to any cheese or charcuterie board!
Try pairing it with some salmon or chicken for a healthy and delicious weeknight dinner!
The possibilities are truly endless when it comes to a light and fresh homemade pesto, so lets jump ahead to the recipe ↓
Sweet Pea Pesto Pasta
Ingredients:
4 cups dry pasta of your choice
1/2 cup reserved pasta water
Parmesan cheese for topping
Fresh pea shoots & radish for garnish (optional)
For the Pea Pesto:
1 cup peas
1/4 cup pine nuts
1 cup fresh basil
1 cup spinach
2 garlic cloves
1/2 lemon, juiced
3 tbsp olive oil
Salt to taste
Method
Cook the pasta of your choice in salted boiling water until al dente. Make sure to reserve about half a cup of the pasta water.
While the pasta is cooking, add the peas, pine nuts, fresh basil, spinach, garlic and lemon juice into a food processor. Start by adding only 1 tbsp of olive oil and begin to blend the pesto. Add the remaining olive oil as needed until you achieve a smooth pesto and then season with salt to taste.
Toss the pasta and the pea pesto together and add some of the reserved pasta water little by little to create a silky sauce. Keep in mind that you will most likely not need to use all of the pasta water.
Top with parmesan cheese before serving. Feel free to garnish with fresh pea shoots and thinly sliced radish!
