Let’s make Maple Cranberry Roasted Carrots!
As you all know, Christmas is right around the corner and you have likely started thinking about the scrumptious meal plan you and your loved ones will be indulging in this year! Roasted Turkey, silky mashed potatoes and my all time favourite… stuffing! Amongst all of those classic rich dishes that we all know and love, there is always some kind of vegetable thrown into the mix.
Every year I always make Maple Bacon Brussels Sprouts which are always a total crowd pleaser! For those that aren’t big on Brussels sprouts, roasted carrots always seem to do the trick! The recipe for my Maple Cranberry Roasted Carrots is a little bit sweet and oh so delicious!
What makes these Roasted Carrots so good!?
First off, nothing says holiday side dish more than roasted vegetables and cranberries! Super festive and very versatile!
This recipe starts off with perfectly roasted carrots that are coated in a savoury marinade made from pure maple syrup, a touch of garlic and aromatic fresh thyme. Fresh cranberries are also tossed in that delicious marinade along with the carrots and roasted until tender.
The cranberries add the perfect burst of tangy goodness that just melts in your mouth. While the maple syrup balances everything out with a touch of sweetness.
You have got to try this recipe over the holiday season! It is extremely low-maintenance and perfectly festive!
Maple Cranberry Roasted Carrots
Ingredients:
8 large carrots, pealed and sliced in half lengthwise
3/4 cup fresh cranberries
1/3 cup pure maple syrup
2 tbsp olive oil
1 tsp garlic powder
2 tsp fresh thyme, chopped
Salt & pepper
Method
Preheat the oven to 375 degrees.
Place the carrots and fresh cranberries onto a baking sheet.
Combine the pure maple syrup, olive oil, garlic powder and fresh thyme in a glass measuring cup. Once combined, pour the mixture over the carrots and cranberries and toss until fully coated. Season with salt and pepper.
Bake for 20 minutes, flip and then bake for an additional 20 minutes, or until the carrots are fully cooked through.
Before serving, add some extra cracked black pepper and salt if needed. Garnish with fresh thyme and extra maple syrup if you like and enjoy!
