Who doesn’t love indulging in classic creamy mashed potatoes, smothered in gravy alongside all our favourite holiday dishes!
With Christmas right around the corner, mashed potatoes are a staple side dish to go along with the turkey, stuffing and assortment of roasted veggies. Don’t get me wrong, classic mashed potatoes are totally delicious… but have you ever considered adding in garlic and a ton of ooey gooey cheese!? So freaking yummy and addicting!!
First things first, you gotta have potatoes!
Potatoes are super versatile and can take on any flavour that you choose! For this recipe, we are adding in yummy garlicy notes that are complemented by sharp cheddar and gruyere cheese… YUM.
I find that by boiling some fresh whole garlic cloves in the water along with the potatoes, you get the perfect infusion of garlicy flavour, without overpowering the dish. They mash together seamlessly with some milk and a touch of butter to give you an irresistibly smooth texture.
Then for the best part…. The CHEESE!
Everything just tastes that much better when cheese is involved. I use classic sharp cheddar because you just can’t go wrong! Then I pair it with some shredded gruyere cheese. Gruyere is perfectly sharp with a subtle funkiness to it that just adds so much flavour to any dish. If you haven’t tried it before than I definitely recommend giving it a taste!
Once everything comes together, it is baked in the oven until melty and delicious! You have got to try it! Perfect to feed a crowd and also lovely as leftovers the next day.
Cheesy Garlic Mashed Potatoes
Ingredients:
5 large potatoes, pealed and diced
5 garlic cloves, whole
1/4 cup milk
1-2 tbsp butter
3/4 cup gruyere cheese, shredded
3/4 cup cheddar cheese, shredded
Salt to taste
Fresh parsley and more cheese for topping
Method
Preheat the oven to 375 degrees.
Cook the diced potatoes and whole garlic cloves in salted boiling water until fork tender.
Drain the potatoes and garlic and add in the milk and butter. Mash until silky smooth. Next fold in the shredded gruyere and cheddar cheese (if you’re a Schitt’s Creek fan, I hope you enjoy my reference 😉 ). Season with salt to taste.
Place the cheesy garlic mashed potatoes into a greased baking dish. Sprinkle with some extra shredded cheese and bake for 20-25 minutes or until the cheese is melty and crispy around the edges.
Sprinkle on some fresh parsley before serving and enjoy!
