I always seem to forget how delicious pitas really are until I take a bite and realize how much I actually like them. Perfect little pockets that you can stuff with pretty much anything!
For this recipe, I have stuffed these warm pita pockets with flavourful chipotle chicken, creamy dill sauce, shredded romaine lettuce and cucumber slices. So yummy and you really can’t get any easier than that!
You can choose to add some more toppings like fresh avocado, pickled red onions or even shredded purple cabbage! The possibilities are endless and you can customize it to your liking 🙂
Starting with the chicken… so flavourful and delicious!
Cut into bite size pieces and tossed in a marinade of chopped chipotle peppers and warm spices. You can also substitute the chicken for roasted cauliflower in this recipe and it is absolutely delicious!!
Recently, I have been loving cooking with chipotle peppers in adobo! They have an addicting smokey flavour with a balance of heat and sweetness. Pairing so nicely with the blend of paprika, cumin, garlic powder and oregano that I have used in this recipe.
Now if there is one tip that I can give you to ensure you have tasty, flavourful food like this chipotle chicken… make sure to have a well stocked spice collection! Maybe I have been watching a little too much Bobby Flay on the food network… but spices seriously add sooooo much flavour which will take any recipe to a whole new level of deliciousness! Not to mention, they can be used in various combinations to enhance any dish!
Then you have the Creamy Dill Sauce… Seriously SO GOOD!
Okay, as much as I love the flavours of the chipotle chicken… the creamy dill sauce has to be my favourite part of this recipe! It is seriously to die for!!
Easily whipped up with a mix of plain greek yogurt, mayonnaise, fresh lemon juice, fragrant dill, garlic powder and onion powder! Perfectly creamy and fresh to liven up this recipe!
This creamy dill sauce almost has a little bit of a ranch flavour vibe going on… which is probably why it is so damn good because who doesn’t like ranch!?
It is the perfect accompaniment to the smokey, chipotle chicken. It also makes a fabulous dip for veggies or grilled pita bread!
Chipotle Chicken Pitas with Creamy Dill Sauce
Ingredients:
2 small pitas, cut in half (or 1 large pita cut in half)
2-3 cups romain lettuce, shredded
3 mini cucumbers, sliced
2 chicken breasts
2 tbsp olive oil
1 tsp paprika
1 tsp garlic powder
1/2 tsp ground cumin
1/2 tsp dried oregano
2 chipotle peppers in adobo, finely chopped
Salt to taste
Creamy Dill Sauce:
1/2 cup plain greek yogurt
1/4 cup mayonnaise
1/2 lemon, juiced
3 tbsp fresh dill, finely chopped
1/2 tsp garlic powder
1/2 tsp onion powder
Method
For the creamy dill sauce, add all of the ingredients into a bowl and stir to combine.
Cut the chicken breast into bite size pieces and place into a bowl. Add the olive oil, paprika, garlic powder, ground cumin, dried oregano, chopped chipotle peppers and salt. Stir and allow the chicken to marinate for a few minutes.
In a non-stick pan, add a small drizzle of olive oil and warm over medium heat. Once the pan is hot, add the marinated chicken and cook for about 5 minutes, stirring occasionally. Or until the chicken is cooked through.
To assemble the pitas… cut each pita in half and heat them in the microwave for about 30 seconds until warm. Spread the creamy dill sauce inside each pita pocket and follow with some shredded romaine lettuce, sliced cucumbers and the chipotle chicken. Feel free to top the pitas with extra creamy dill sauce if you like and enjoy!!
Recipe Notes:
Feel free to add extra toppings inside your pitas like fresh avocado or pickled red onions.
Make sure to warm the pitas before assembling them as this helps to avoid any cracking or splitting so they are easier to stuff.
If you are looking for a vegetarian option, you can substitute the chicken for cauliflower! Simply toss the cauliflower in the same ingredients and roast in the oven at 375 degrees until they are crispy and cooked through.
