With the holidays come all the fun social gatherings and parties where you will likely be indulging in fancy cocktails and rich, delicious meals. While these heavy foods and sooo tasty, I always like to include something light to freshen everything up! This Citrus Beet Salad with Balsamic Dressing does just the trick and pairs perfectly with any holiday spread!
A bright and colourful salad that looks totally fancy but is actually super simple to make!
What makes this Citrus Beet Salad with Balsamic Dressing so good!?
Beets are the star of the show in this recipe! They are bright and colourful with a yummy earthy flavour that compliments the fresh oranges and goat cheese!
Beets are in their prime during the winter months, however you can find them all year long at the grocery store. During the winter they are extra tender and taste that much sweeter so I love to utilize them in different ways around the holidays. Beets can be roasted with a combination of other comforting root vegetables, or they can be enjoyed cold in a salad like the recipe I am sharing today.
These sweet, earthy purple beets are placed on some leafy greens with juicy orange slices, tangy goat cheese and crunchy pistachios and then drizzled with a balsamic dressing. Super simple and absolutely delicious!!

Citrus Beet Salad with Balsamic Dressing
Ingredients:
4-5 medium beets, skins removed and sliced
4-5 cups mixed greens
2 navel oranges, sliced
1/4 cup pistachios, roughly chopped
3 tbsp goat cheese
For the Balsamic Dressing:
1/4 cup olive oil
2 tbsp balsamic vinegar
3 tbsp pure maple syrup
1 tsp dijon mustard
1/2 lemon, juiced
Salt to taste
Method
Add the pealed and sliced beets into a pot filled with enough water to fully submerge the beets. Bring to a boil and allow to simmer until the beets are soft and fully cooked through. This usually takes about 30-40 minutes. Once cooked, drain the beets and place onto a plate and allow to fully cool.
To make the balsamic dressing, add all of the ingredients into a glass jar and shake until fully combined. Set aside until ready to use.
To built the salad, add the mixed greens to a bowl and top with the cooled beets, orange slices, pistachios and goat cheese. Toss the salad with some of the balsamic dressing before serving and enjoy!
Recipe Notes:
The beets can be boiled ahead of time and stored in the fridge until ready to use. You can also opt for pre-cooked beets to save time. You can find pre-cooked beets that have been vacuum sealed in the produce section of the grocery store!
If you can’t find pistachios at the grocery store, chopped pecans or walnuts work great with this recipe!
