Alright y’all, we have officially entered pasta season!
During this time of year when the temperature begins to drop and we start to bring out our fall/winter wardrobes, I start to crave comfort food… anyone else with me?? One of the ultimate comfort foods for me is a big bowl of pasta… YUM.
Today I am sharing the recipe for my Creamy Pumpkin Pasta with Crispy Sage Breadcrumbs. It is insanely easy to make and perfect for this time of year! Warm and comforting and of course, totally flavourful!
It’s all about the pumpkin and sage!
This recipe reminds me of the holidays! The pumpkin is a great subtle flavour that is brought to life with pops of sage and thyme… two herbs that I love to cook with around the holidays! They are commonly used in popular recipes like everyones favourite holiday side dish… stuffing! (You can find my recipe for Classic Apple Sage Stuffing here)
The creamy pumpkin sauce easily comes together in less than 20 minutes! Great for weeknight meals when you are short on time or don’t feel like cooking an extravagant meal, but want something delicious and fast.
To top the dish off, you have incredibly flavourful crispy sage breadcrumbs. I don’t know about you guys, but I loooove have a little crunch on top of my pasta and these breadcrumbs definitely do the trick!

Creamy Pumpkin Pasta wth Crispy Sage Breadcrumbs
Ingredients:
4 cups of dry pasta shells
2 tbsp olive oil
1/2 medium yellow onion, finely chopped
3 garlic cloves, minced
1 tbsp tomato paste
1 cup pure pumpkin puree (*do not use pumpkin pie filling)
3/4 cup chicken stock
1/2 cup cream
1/2 tsp dried thyme
1/2 tsp ground nutmeg
Salt to taste
2 cups fresh spinach
For the Sage Bread Crumbs:
2 tbsp butter
1/2 cup panko breadcrumbs
1/4 tsp ground nutmeg
1/2 tsp dried thyme
1/2 tsp ground sage
Pinch of salt
Method
To make the sage breadcrumbs, melt the butter over medium heat in a non stick frying pan. Once the butter is melted, add the breadcrumbs, nutmeg, thyme, sage and salt. Stir to combine. Cook until the breadcrumbs get golden brown, stirring occasionally. Set aside.
Cook the pasta shells in salted boiling water.
While the pasta is cooking, heat the olive oil and finely chopped onions over medium heat. Once the onions begin to turn translucent, add in the minced garlic and cook for a minute or so until the garlic becomes fragrant. Next add in the tomato pasta and pumpkin puree. Stir to combine all of the ingredients. Next pour in the chicken stock, cream, ground nutmeg and dried thyme. Stir until you have a smooth and creamy sauce. Make sure to season with salt to taste.
Add the cooked pasta into the creamy pumpkin sauce, along with the fresh spinach. Stir until all of the ingredients are combined and the spinach begins to wilt.
Top each portion of pasta with some of the sage bread crumbs before serving and enjoy!
