Let your taste buds sing with my Crunchy Lettuce Wraps with Peanut Sauce!
I love lettuce wraps because they are so easy to make and you can use whatever ingredients you have at home!
My homemade creamy peanut sauce brings big flavour to these lettuce wraps. Not to mention, they are amazingly crunchy from the leafy green lettuce and fresh vegetables. The noodles give these lettuce wraps substance so they are sure to fill you up, making this recipe perfect for a weeknight dinner, mid-day lunch and are even delicious as leftovers!

Ingredients:
- 1 head of leafy green lettuce
- 4 bundles of stir fry chow mein noodles (200g)
- 1/2 a medium onion
- 1 tbsp olive oil
- A drizzle of sesame oil
- 1/2 cup chopped unsalted peanuts
- 1 large bell pepper
- 2 medium carrots
- 1/3 of an English cucumber
- 1 large handful of fresh cilantro
- 1 fresh lime, juiced + more lime wedges for serving
The Peanut Sauce:
- 1/2 cup peanut butter
- 2 tbsp soy sauce
- 2 tbsp sesame oil
- 2 tbsp maple syrup
- 2 tsp hoisin
- 1 tsp sriracha
- 1/4 cup water
Method:
In a blender, add all of the ingredients for the peanut sauce and blend until smooth. Set aside.
To prep the vegetables, first peel the carrots and grate them until shredded. Next julienne the cucumber and bell pepper into approximately 1 inch long strips. Set aside.
Roughly chop both the cilantro and unsalted peanuts. Set aside.
Chop the onion into small pieces. Heat a large nonstick frying pan (preferably one that is deep) and add the olive oil. Once the olive oil is hot, add the chopped onions and cook until soft and translucent.
While the onions are cooking, place the stir fry chow mein noodles into salted, boiling water. This should only take a few minutes as they cook very quickly.
Once the stir fry chow mein noodles are finished cooking, strain them to remove the water and drizzle with some sesame oil. This will add flavour and prevent the noodles from becoming too sticky and clumping together.
Add the noodles into the frying pan with the onions and stir in half of the peanut sauce. Next, add the fresh carrots, bell pepper, cucumber, cilantro and unsalted peanuts. You can now add more peanut sauce as needed until all of the ingredients are combined and fully coated in the sauce.
Cut the fresh lime in half and juice the entire lime over the noodles. Give the noodles a quick stir to ensure the lime juice is tossed throughout the noodles.
Place the noodles into a large bowl and serve alongside fresh lettuce leaves and lime wedges.
Place the noodle filling onto the leafy lettuce and squeeze over some fresh lime juice. You can choose to enjoy this dish as a vegetarian option, or you can add a protein of your choice. I often top my lettuce wraps with grilled chicken!
