Let’s make my Delicious Grab and Go Banana Muffins!
Whether you are the early riser and looking for a quick snack to grab as you run out the door to your back to back meetings, or the mid-day snacker looking for something delicious to indulge in while binge watching your newest Netflix obsession on the couch, this recipe will satisfy your cravings.
I created this recipe because the majority of muffin recipes out there are filled with unnecessary sugars and fats and lets be real, I never finish the bunch of bananas before they start to go brown… anyone else??
My Delicious Grab and Go Banana Muffins are so moist (yes I hate myself for using the word moist, but its fitting) that they melt in your mouth and are the perfect snack for anytime of day! I can’t wait for you to try out my recipe, I sure hope you enjoy!
Ingredients:
- 3 very ripe medium to large bananas
- 1 egg
- 1/4 cup margarine or butter
- 1/4 cup coconut oil
- 5 ml pure vanilla extract
- 1 1/2 cups all purpose flour
- 1/2 cup coconut sugar
- 5 ml baking soda
- 5 ml baking powder
- 2 ml salt
- 5 ml ground cinnamon
- Extra cinnamon and quick oats for garnish
Method
Preheat the oven to 400 degrees. Line your muffin tins with paper liners and set aside. This recipes yields about 12 muffins.
In a glass bowl, combine the margarine and coconut oil and heat in the microwave until melted. Set this mixture aside too cool.
In a separate bowl add pealed bananas and mash with a fork. Set aside.
Crack the egg into the margarine and coconut oil mixture and add the vanilla extract. Lightly whisk until combined. You can now pour this over the mashed bananas and mix.
In a separate bowl combine all dry ingredients (flour, coconut sugar, baking powder, baking soda, salt and cinnamon). If you like your muffins on the sweet side, feel free to add up to 1 cup of coconut sugar instead of 1/2 cup.
Pour wet ingredients into the dry ingredients and stir to combine. Try not to over mix.
Spoon the batter into the muffin cups about 3/4 full. Sprinkle with a light dusting of cinnamon and a few quick oats.
Place the muffin tins in the oven and bake for 14-18 minutes or until a toothpick can be inserted and removed clean.
