Weekday meals can be difficult if you have a busy schedule. My Garlic Parmesan Pasta with Mushrooms and Thyme is so quick and easy to make and doesn’t require a ton of expensive ingredients! It is great for those busy days where you don’t have much time to whip up a yummy meal but are craving something delicious, fast and flavourful!
Enjoy this recipe as is, or feel free to get fancy and add your choice of protein. Grilled prawns or chicken are great additions!

My Tips to Help Prepare Easy Weeknight Meals
- Plan your meals ahead of time! This will save you so much time cooking and at the grocery store! Not to mention it will also help you to save money because you will know exactly what to buy ahead of time and can avoid buying too much.
- Package your meat in individual serving sizes before placing it in the freezer. This is a game changer! You will reduce any waste and your meat is prepped and ready for whenever you choose to cook it!
- Try out ingredients such as mushrooms (like in this recipe!) that are meaty, hearty and quick cooking replacements for meat.
- Consider choosing proteins with a fast cook time if you know you will have a busy day. Shrimp and fish are great options! Tenderizing chicken is also great for this because it makes the meat thinner, more tender and it cooks much quicker!
Ingredients:
- 250g spaghettini pasta
- 4 cups of sliced mushrooms
- 1/4 cup olive oil
- 1-2 tbsp fresh thyme (plus more for garnish)
- 5-6 garlic cloves
- 1 tbsp butter
- 1 cup freshly grated parmesan cheese
- 3/4 cup reserved pasta water
- Salt
Method:
Start by adding your spaghettini pasta to salted, boiling water.
As the noodles are cooking, heat up the olive oil in a pan over medium heat and add the mushrooms and fresh thyme. Allow the mushrooms to cook down and get nice and golden brown and the fresh thyme to get fragrant.
Add the minced garlic to the mushrooms and thyme and allow to cook for about a minute before adding the spaghettini noodles. Make sure to add the garlic at the very end just before you add the noodles, as garlic burns very easily.
Once you have tossed the noodles and mushrooms together, reduce the heat to low and add in the butter. Once the butter has melted into the pasta, add the freshly grated parmesan, and half of the reserved pasta water. You can slowly add more reserved pasta water as needed until you have a creamy sauce. Season with salt if needed and top with additional parmesan and thyme.
Serve immediately and enjoy!!
