You have to try my Flavourful Tandoori Chicken Flatbread!
This is not your typical everyday flatbread recipe… it is a serious explosion of flavour in your mouth! The grilled chicken is so tender and delicious from the homemade marinade. I use a ton of warm aromatic spices that come to life with the tang of the yogurt and zesty lemon juice!
My favourite part of this recipe next to the comforting blend of spices has got to be the juicy fresh MANGO. You guys it really just makes the whole dish! Everything comes together on a soft, yet crispy piece of naan bread! So easy and no messing around with pizza dough.
My mouth is seriously watering just thinking about this flatbread… so let’s get to making it!
Ingredients:
2 boneless skinless chicken breasts
4 plain naan bread
1 red bell pepper, sliced into 1 inch strips
1/4 red onion, thinly sliced into 1 inch strips
1 mango, diced
1 cup mozzarella cheese, shredded
2 tbsp tomato paste
Fresh cilantro for garnish
Good quality olive oil
Marinade:
2 cups plain yogurt
1 lemon, juiced
5 garlic cloves, minced
2 tbsp freshly grated ginger
1 tbsp paprika
2 tsp garam masala
1 tsp ground coriander seed
2 ml turmeric
2 ml cayenne
Salt to taste
Method:
First you want to make your marinade! Combine all of the ingredients in a bowl and stir to combine. Reserve half of the marinade in a sealed container and place it in the fridge. You will use this later.
Cut your chicken breast in half and add it to the bowl with the remaining half of the marinade. Make sure the chicken is fully coated. Tightly seal the bowl with plastic wrap and place in the fridge for a minimum of 4 hours. Overnight works best 🙂
Preheat the oven to 350 degrees.
Cook the marinaded chicken breast on a hot grill pan (medium- medium high temperature) until each side has beautiful grill marks. Finish cooking in the oven for an additional 5-10 minutes or until the chicken is cooked through. I find this allows the chicken to stay super tender and delicious! Alternatively, you can choose to fully cook the chicken in the grill pan or on the bbq.
Once the chicken is cooked, remove from heat and cut into bite size pieces. Set aside.
In a bowl, add the tomato paste to the reserved half of the marinade that you saved earlier and stir to combine. Set aside.
Place the naan on a greased baking sheet and brush with some good quality olive oil. Spread over the marinade that you just mixed up with the tomato paste. Then top with the chicken, mozzarella cheese, red onion, red pepper and diced mango. Drizzle with additional marinade if you like.
Place the flatbread into the oven (still at 350 degrees) and cook for around 15 minutes, or until the cheese is melted and the naan is tender but crispy.
Top with fresh cilantro and enjoy!!
