Let’s whip up some Fresh and Easy Guacamole!
I don’t know about you, but I love guacamole!
It’s just one of those dishes that seems obligatory at any gathering. Light and refreshing, while being totally customizable to your taste buds. Not to mention… extremely easy to make!
Just because we are in the middle of winter, doesn’t mean we can’t enjoy a yummy summertime favourite!
Keep it Simple!
Guacamole should be easy and of course delicious!
In my opinion, you only really need a few simple ingredients to elevate this classic dip! You could honestly get away with only using avocados, fresh lime juice and salt… but who doesn’t love a little dazzle dazzle, am I right!?
So let’s get to it… for my Fresh and Easy Guacamole, you will need:
Avocados… DUH. They should feel firm with a slight softness to the touch. If you feel the avocado is a little too firm, leave it out on the counter for a few days and it will ripen before you know it!
Lime… Freshly squeezed lime juice is a must. This will add a ton of flavour and also help to keep the avocado fresher for longer.
Cilantro… Cilantro is a staple in my kitchen and adds so much freshness to this guacamole!
Tomato… I love the juiciness that a sweet tomato adds to this recipe. I always use cherry tomatoes because they have a ton of flavour, however Roma tomatoes also work really great as well! Just be sure to remove the seeds so you don’t end up with a watered down guac.
Jalapeño & Red Onion… These ingredients add the perfect kick to amp up this classic dip!
Garlic… A small touch of garlic powder goes a long way when it comes to guacamole. You don’t need much, but a little bit really does round out all the flavours in my opinion!
Salt… A small pinch of salt with bring the entire recipe together and allow all of the ingredients to sing.
Fresh and Easy Guacamole
Ingredients:
2-3 ripe avocados
1/2 lime, juiced
1/4 cup chopped fresh cilantro
1/2 cup cherry tomatoes, finely diced
1/2 jalapeño, finely diced with seeds removed
1/4 cup red onion, finely diced
1/4 tsp garlic powder
Salt to taste
Method
Add 2-3 ripe avocados into a bowl with the skin and pits removed. Next add in the fresh lime juice, cilantro, jalapeño, red onion and garlic powder.
Using the back of a fork, gently mash until smooth (or to your desired consistency).
Mix in the diced tomatoes and season with salt to taste. Serve with chips or veggies to dip and enjoy!
Recipe Notes:
If your avocados are quite large, then you can use two for this recipe. If the avocados are on the small- medium size, then use 3 avocados for this recipe.
Feel free to adjust the seasoning (salt and garlic powder) to your taste. This also goes for the fresh lime juice… if you notice your lime isn’t very juicy, then add more until it tastes to your liking.
To store this Guacamole, place a piece of plastic wrap over the top of the guacamole and gently press down to make sure it is fully covering the surface without any air bubbles. Place in the fridge until you are ready to enjoy.
