Who doesn’t love a Healthy Bacon & Avocado Breakfast Quesadilla!
I love breakfast no matter the time of day, so I am always looking for delicious new ways to eat it! One of my current favourite ways to enjoy the classic breakfast items, bacon and eggs, is in a crispy quesadilla with melty cheese and fresh jalapeño!
My Bacon & Avocado Breakfast Quesadilla is quick and easy to make and full of flavour! You can have all of the ingredients prepped and ready to go for easy meals throughout the week if you like to meal prep!
Ingredients:
- 2 flour tortillas
- 4 eggs, scrambled
- 1/2 cup mozzarella cheese, shredded
- 1/2 cup cheddar cheese, shredded
- 1 avocado, sliced
- 3 slices of crispy bacon, roughly chopped
- 1/2 a fresh jalapeño, sliced (optional)
- Cooking spray
Method:
In a nonstick frying pan, apply some cooking spray and place the tortillas into the frying pan.
On half of each tortilla, layer on half of the shredded mozzarella and cheddar cheese, followed by the scrambled eggs, avocado slices, jalapeño slices (if using) and crispy bacon. Top with the remaining shredded cheese and fold the other half of the tortilla over to create your quesadilla.
Cook over medium heat until both sides of the tortillas are golden brown and the cheese is nice and melty. Cut in half and serve immediately.
