This bowl is packed with layers of flavour
I love a good bowl because they can be eaten for literally any meal… breakfast bowls, salad bowls… you name it! They are trendy and totally customizable so you can use whatever ingredients you have on hand.
When I am making a bowl I often like to start with some form of starch if I am looking for a more substantial, well-balanced meal. For this recipe I am using coconut rice… YUM. If you have never tried coconut rice than you are missing out!! The delicious aromatics of creamy coconut just pairs so perfectly with rice. It is the best accompaniment with almost any ingredient… but especially with these buttery garlic shrimp!
Shrimp are a staple in my kitchen because they are easy to make and cook so quickly! They are light and can take on whatever flavour profile you want! The shrimp in this recipe are marinated in garlic and a hint of cajun spices and then pan fried in melted butter… it seriously doesn’t get more simple or DELICIOUS than that!
I love to lighten everything up with fresh greens and avocado… but the real star of this bowl is the mango salsa! So juicy and sweet with a subtle hint of spice from the fresh radish and jalapeño! Trust me… you have got to try it!!
Shrimp Bowls with Mango Salsa & Coconut Rice
Ingredinets:
For the Coconut Rice:
1 (400 ml) can coconut milk
2/3 cup water
1 cup rice
Pinch of salt
For the Mango Salsa:
2 large ripe mangoes, diced
1 mini cucumber, diced
3 large radishes, finely diced
1/3 jalapeno, finely diced
A large handful of cilantro (about 1/2 cup), roughly chopped
1 lime, juiced
Pinch of salt
For 2 Shrimp Bowls:
14-16 shrimp, tails removed
1 tbsp olive oil
6 garlic cloves, minced
1 tsp cajun seasoning
1 tbsp butter
2 handfuls of mixed greens (about 2 cups)
1 small avocado, sliced
Mango salsa (see recipe above)
Coconut rice (see recipe above)
Method
In a sauce pan, heat the coconut milk and water over medium high heat until it begins to gently boil. Add in the rice and a pinch of salt. Stir to combine and then reduce the heat to low and allow to simmer until all of the liquid is absorbed and the rice is fluffy.
For the mango salsa, add the all of the ingredients into a bowl a stir to combine. The longer the mango salsa sits, the more the flavours will marinate together to create the perfect bite!
Add the shrimp, olive oil, minced garlic and cajun seasoning into a bowl. Stir and allow the shrimp to marinate for a few minutes.
In a non stick pan, heat the butter over medium to medium high heat. Once the pan is hot and the butter has melted, add in the shrimp. Cook for a few minutes per side until the shrimp are cooked through.
To build the bowls, add a scoop of coconut rice followed by a handful of mixed greens. Spoon on the mango salsa and half of a small avocado. Top the bowls with 6-8 shrimps each and enjoy!
