Let’s make a Southwest Chicken Salad with Cilantro Lime Dressing!
I love that this hearty Southwest Chicken Salad is not your average everyday salad! This recipe showcases fresh and crunchy ingredients like sweet corn and black beans. These unique flavours pair perfectly with the sliced chicken breast that is coated with some of my favourite southwestern spices.
On top of all of these yummy flavours, I especially love that this Southwest Chicken Salad with Cilantro Lime Dressing is substantial enough to enjoy as a full meal that will keep you feeling satisfied! Plus it is a great make ahead dish so you can have healthy meals ready to go throughout the week!

This colourful salad is full of delicious Southwestern Flavours
Personally, I enjoy food so much more when it is colourful and this recipe is definitely filled with vibrant ingredients!
A combination of fresh and crunchy chopped romaine and kale creates the base for this salad! Then you have fresh cucumber, cherry tomatoes, sweet corn and hearty black beans that are tossed in some fresh lime juice and a touch of salt. To top it off, there is house made crunchy tortilla crisps and sliced chicken with the most delicious blend of southwestern spices!
You can’t forget about the dressing!
My recipe calls for this light and fresh Cilantro Lime Dressing! It is perfectly tangy, with a hint of sweetness and of course a ton of freshness from the cilantro! It really brings all of the ingredients in this recipe together!
I know cilantro can be a tricky ingredient because there is really no in between with it… you either love it or hate it. For me, I absolutely LOVE cilantro!! But for my followers who may not be into it like me, you can absolutely substitute it for another fresh herb of your choice! Parsley works great!
Southwest Chicken Salad with Cilantro Lime Dressing
Ingredients:
For the Chicken:
2-3 boneless chicken breasts
2 tbsp olive oil
2 tsp paprika
1 tsp ground cumin
2 tsp chili powder
2 tsp garlic powder
1/2 tsp salt
For the Salad:
5 cups shredded lettuce (romaine and kale)
1 cup black beans, rinsed
1/2 lime, juiced
Salt to taste
1 cup canned corn, rinsed
1 cup cherry tomatoes, chopped
3 mini cucumbers (or 1/3 English cucumber), sliced
2 medium tortillas
Olive oil
Seasoning salt
For the Cilantro Lime Dressing:
1/4 cup olive oil
1 tbsp white wine vinegar
2 tbsp honey
1/4 cup cilantro, finely chopped
1/2 lime, juiced
Salt to taste
Method
For the Cilantro Lime Dressing, add all of the ingredients into a glass jar and stir to combine and seal with a lid. Make sure to shake well before use.
For the chicken, drizzle with olive oil and sprinkle on the spices to fully coat each side. Place the seasoned chicken into a lightly greased air fryer basket and air fry for about 12 minutes or until cooked through. You can bake the chicken in the oven if you do not have an air fryer.
Slice the tortillas into thin strips about 1-2 inches long. Drizzle with some olive oil and sprinkle with seasoning salt. Add into a lightly greased air fryer basket and air fry for 5-7 minutes or until golden brown and crispy. You can bake them in the oven if you do not have an air fryer.
Juice half a lime over the black beans and season with salt to taste.
To assemble the salad, fill the bowl with the shredded romaine and kale mixture. Top with the black beans, canned corn, cherry tomatoes, cucumber, tortilla crisps and the sliced chicken. Drizzle with the cilantro lime dressing and enjoy!
