Happy Monday Everyone! Let’s make the best Roasted Cauliflower Tacos!

I don’t normally post on Monday’s… but this week is going to be a little different.
As most of you know, Cinco De Mayo is coming up on Wednesday this week. Personally, I look forward to this day every year because honestly if there is any excuse for me to hang out with a taco in hand while sipping a margarita, I’m totally into it!!
I wanted to share one of my go-to recipes that pairs perfectly with a good margarita!
Honestly, I had such a hard time trying to decide on just one recipe, sooooo…. I decided to create a little Cinco De Mayo Series for this week! Each day leading up to Cinco De Mayo, I will share a tasty recipe (or two 😉 ) with you and finish with a mouth-watering cocktail on the final day of the series!
I figured it was only fitting to start day one of my Cinco De Mayo Series with, you guessed it… a totally flavourful and delicious taco recipe!
I love tacos because they are so versatile! You can stuff a warm tortilla with pretty much anything you feel like. They can be as simple and easy as you want, using whatever ingredients you have on hand!
The recipe I am sharing with you all today is an all time favourite of mine… Roasted Cauliflower Tacos! They are a little bit smokey, fresh and perfectly tangy! Honestly the best, in my humble opinion!
So what makes a fabulous taco??
First off, a lightly grilled tortilla that is perfectly warmed through will ALWAYS enhance a taco in the best way! Trust me, it makes all of the difference! You can place your tortillas over an open flame on the stove top, or even in a dry grill pan! This will give your tortilla tremendous flavour that will take your tacos to the next level!
Next, you have to have a “protein” that packs a punch with amazing flavour!! This can be anything from chicken, beef, prawns, mushrooms or in this case, cauliflower! The list goes on and on! This ingredient will give your taco substance and acts as the main flavour profile for the dish. You can use a blend of spices, a tasty marinade or even a crunchy breading to take it over the top!
Then you have the toppings. This is where you can really get creative to bring freshness and texture that will make your taco unique! You can use anything from crunchy cabbage to black bean and corn salsa and everything in between! In this recipe I include my homemade pickled red onions. They bring the perfect crunch that is both sweet and tangy!
Lastly, there should always be some kind of sauce to balance out all of the flavours. In this recipe I use my homemade avocado crema that does just that! It balances out the smokey flavour of the roasted cauliflower and as a bonus, is super quick and simple to whip up! I make mine with fresh avocado, a tiny bit of plain greek yogurt, cilantro, fresh lime juice, some water and salt, all whipped together to create this fresh, creamy sauce! If you aren’t into avocado, don’t worry, you could use sour cream instead!
But regardless of how yummy all of the ingredients are that I am including in this recipe, the roasted cauliflower is most definitely the star of the show! Roasting it gives this amazing crispy crust on the outside that is bursting with flavour from all of the spices, while the inside is perfectly creamy! I seriously cannot wait for you to try!
Now let’s get into it and start cooking!
Ingredients:
- 4 Tortillas
- 1/2 a large head of Cauliflower
- 4 tbsp Olive Oil
- 5 ml Smoked Paprika
- 5 ml Garlic Powder
- 2 ml Cumin
- Salt to taste
Toppings:
- Purple Cabbage
- Fresh Avocado, sliced
- Pickled Red Onions
- Avocado Crema
- Fresh Lime Wedges
- Fresh Cilantro for garnish
Method:
Preheat the oven to 425 degrees.
Cut the cauliflower into bite size pieces (approximately 1 inch in size) and place into a bowl. Add the olive oil, smoked paprika, garlic powder, cumin and salt to the bowl and toss until the cauliflower is evenly coated in the spices and oil.
Place the cauliflower onto a dry baking sheet. You will likely need to drizzle with an additional small amount of olive oil so that the cauliflower doesn’t dry out, or stick to the baking sheet. You can choose to skip this step if you feel your cauliflower is coated with enough olive oil.
Place the baking sheet in the oven and bake until crispy and delicious! This should take approximately 22 minutes. Make sure you flip the cauliflower half way ( at 11 minutes) to ensure it is crispy on both sides.
While the cauliflower is cooking you can prepare your toppings by thinly slicing the purple cabbage and fresh avocado. Slice the fresh lime into wedges and set all of the toppings aside.
Once the cauliflower is cooked, I like to sprinkle a small dash of salt over the top while they are hot. Now it is time to start assembling your tacos! I like to heat up my tortillas first… they are extra tasty if you place them on a grill pan to gently warm them through.
Place the purple cabbage, fresh avocado, pickled red onions and cauliflower onto the warm tortillas. Drizzle with homemade avocado crema and fresh lime juice. Top with fresh cilantro and enjoy!!
