Okay guys, I think I am ready to move on from summer and officially enter full fall mode!
I really do love this time of year! The leaves are already starting to change colour and pumpkin spice everything, and I mean everything is making an appearance and the flavours of warm apple are popping up in a ton of recipes!
For me, Chai is one of my favourite fall flavours! I love it as a latte, steeped tea or paired with coffee! My Vanilla Chai Cold Brew is so yummy and the perfect drink to transition you from summer to fall. It is very simple to make and full of rich deep flavours that are so comforting!

How to make Cold Brew Coffee
Cold Brew Coffee is delicious and bold with an undeniably smooth finish. It is brewed essentially low and slow to remove any bitterness from the coffee beans, leaving you with a rich, one of a kind flavour! You can pick it up from your local grocery store, or it can easily be made at home!
If you want to make cold brew at home, you will only need a few simple ingredients and kitchen tools:
Coffee Beans, coarsely ground
Water
Mason Jar
Coffee Filter
Fine Sieve
For the perfect cold brew, place coarsely ground coffee beans into a mason jar with some water. A ratio of approximately 1 oz of coffee beans per 1 cup of water seems to work perfectly in my opinion. Screw on the lid and allow the coffee to steep for 12-24 hours. Once the coffee is perfectly steeped, place a coffee filter into a fine sieve and pour the coffee through it. The combination of the sieve and coffee filter will catch all of the coffee beans and you are left with a deliciously rich and smooth cold brew coffee!
Vanilla Cinnamon Coffee Sweetener
The recipe for my Vanilla Chai Cold Brew is made extra yummy with the addition of my homemade Vanilla Cinnamon Coffee Sweetener! This can be made ahead of time and stored in the fridge so it is ready to use!
I use coconut sugar in my recipe because I find it less sweet than granulated or brown sugar. Plus there are some health benefits to choosing coconut sugar as well! It contains calcium, zinc, iron and potassium and is minimally processed. It also contains the ingredient inulin which helps the body to absorb the sugar without spiking your blood sugar as intensely as granulated or brown sugar would.
Ingredients:
Cold Brew Coffee
Water
Tazo Chai Latte Concentrate
Vanilla Cinnamon Coffee Sweetener
Ground Nutmeg or Cinnamon for garnish
Ice
For the Vanilla Cinnamon Coffee Sweetener:
1/2 Cup Water
1/2 Cup Coconut Sugar
1 Tsp Vanilla Extract
2 Cinnamon Sticks
Method:
Start by making the Vanilla Cinnamon Coffee Sweetener! You want to add the water, coconut sugar, vanilla extra and cinnamon sticks to a pot and bring to a gentle boil. Stir the ingredients together until the sugar is fully dissolved. This should only take a few minutes. Remove from heat and allow to cool for around 30 minutes. You can store your coffee sweetener in a mason jar or air tight container in the fridge.
To make the Vanilla Chai Cold Brew, you want to fill your glass with ice. Fill 1/3 of the glass with cold brew and 1/3 of the glass with water.
Next you want to add the Tazo Chai Latte Concentrate into a milk-frother and blend until you get a nice smooth foam. Top the remaining third of the glass with the foamy Tazo Chai Concentrate. Garnish with ground nutmeg or cinnamon and enjoy!!
